Ingredients:

  • 12 ounces (340g) spaghetti

  • 1 pound (450g) mixed mushrooms (such as porcini, shiitake, oyster, or cremini), thinly sliced

  • 3 tablespoons olive oil

  • 2 tablespoons truffle oil (or to taste)

  • 2 tablespoons lemon juice

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Fresh parsley or chives for garnish

  • Grated Parmesan or Pecorino cheese (optional)


Directions:


  1. Clean the mixed mushrooms using a damp paper towel or soft brush to remove any dirt. Avoid washing them, as mushrooms can absorb water. Thinly slice the cleaned mushrooms. You can use a variety of mushrooms like porcini, shiitake, oyster, and cremini for a rich flavor profile.

  2. Bring a large pot of salted water to a boil. Add the spaghetti to the boiling water and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Once cooked, drain the spaghetti and set aside. Reserve a cup of pasta water in case you need to adjust the sauce consistency later.

  3. In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced mushrooms to the pan, spreading them out in an even layer. Allow them to cook without stirring for a few minutes to develop a nice sear. Stir the mushrooms and continue cooking until they're tender and golden brown, usually around 5-7 minutes. Season the mushrooms with a pinch of salt and pepper, then remove them from the pan and set aside.

  4. In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté the garlic for about 1 minute until fragrant but not browned. Reduce the heat to low and add the truffle oil and lemon juice to the pan, stirring to combine. Return the sautéed mushrooms to the pan and toss them in the truffle oil mixture.
