Ingredients:

  • 8 ounces (225g) of spaghetti or your favorite pasta

  • 1 pound (450g) large shrimp, peeled and deveined

  • 2 cups cherry tomatoes, halved

  • 3 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes (adjust to your spice preference)

  • 1/4 cup fresh basil leaves, chopped

  • 1/4 cup fresh parsley, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons butter

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Grated Parmesan cheese (optional, for serving)

Directions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water. Set aside.

  2. Sauté the Shrimp and Tomatoes: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook for about 2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil. Add the halved cherry tomatoes, minced garlic, and red pepper flakes. Sauté for 2-3 minutes until the tomatoes start to soften and release their juices.

  3. Combine the Ingredients: Return the cooked shrimp to the skillet with the tomatoes. Add the butter, lemon juice, chopped basil, and parsley. Stir everything together to coat the shrimp and tomatoes with the flavorful sauce. Season with salt and pepper to taste.

  4. Toss with Pasta: Add the cooked and drained pasta to the skillet with the shrimp and tomatoes. Toss everything together gently, allowing the pasta to soak up the delicious sauce. If the sauce seems too dry, add some of the reserved pasta water to achieve the desired consistency.
